Cooking Tip

For the best results, remove the organic beef medallions from the refrigerator 20–30 minutes before cooking. Heat a heavy frying pan until it is smoking hot, then sear the steaks for approximately 2–3 minutes per side (depending on thickness) for a medium cooked finish. Allow them to rest for 5 minutes before serving.

Please Note: As these are naturally lean steaks, they should be cooked quickly over a high heat. If the pan is not hot enough, the meat may release moisture and begin to stew rather than sear, resulting in a tougher texture. Likewise, overcooking will reduce tenderness, so we recommend cooking to medium-rare or medium for the best eating experience.
