Organic Offal

Here at Coolanowle we use a nose to tail approach in our meat processing and try to use as much as possible of the animals carcass. The liver, heart, kidneys, sweetbreads are all considered offal. Their availability on butcher counters nowadays is rare which is a shame because even in small amounts they are BURSTING with Nutritional Value… If you haven’t tried offal yet give it a go. It is a thrifty cut of organic meat so you might surprise yourself!
