Organic Beef Brisket is one of the most versatile cuts of beef.
The brisket comes off the breast of the animal . It is a long flat muscle with a covering of fat. This is a very active muscle and therefore needs a slow and low cooking.
This is an ideal piece for pulled/ shredded beef. Delicious served warm on a rustic baguette, tossed in a BBQ sauce and paired with a vintage mature cheddar and coleslaw!
Another popular way of cooking brisket is by hot smoking(if you have access to a smoker).
The classic way to use is to do spiced beef (pastrami).
