Flavoursome Pork roast is  a cut  from the neck of the animal.  The common feature of all collar pork  meat is that it is slightly fatty and therefore doesn’t dry out when cooked for a long time.   Is particularly good for long, gentle cooking roast  or can be used  in casseroles and stews.
